I'd suggest spending a few weeks here and there working from Dublin or London if you can... just get an airbnb, work from there and socialise in the evenings... then go back home until the urge comes back again. It's a smallish Drysdale Jiu Jitsu gym in North Dublin. MMA is not it's main focus by any means. As far as I know they only started having proper MMA classes in the last year or two - before that it was kinda closed off and you had to have x years experience in bjj and Muay Thai at the gym to attend. As far as I know he's far more involved in the organisational side of things in Irish MMA but he's absolutely a jitz guy first and foremost. source, 2019 ↗

Wild Geese is a good place with judo and bjj, and then you have East Coast Jiu Jitsu Academy as well further down, very good place from what I've heard. I know you said south country Dublin, but if you do find yourself on the north side often there is Sambo Academy Ireland close to Connolly Station source, 2018 ↗
